Piedmont is truly the land of truffles, and there are myriad recipes using them, such as these rich and filling little canapés. Truffles are a luxurious ingredient and can be very expensive, but this is a perfect recipe for an indulgent dinner party since they can be made in advance and taste divine.


  • 9 slices white or brown bread
  • 115 g/4 oz/ cups freshly grated Parmesan cheese
  • 115 g/4 oz/½ cup unsalted butter, softened
  • 30 g/ oz finely chopped truffle
  • a few slices of truffle, to garnish


  1. Cut 18 circles out of the slices of bread using a 7.5 cm/3 in round pastry or cookie cutter and toast them all lightly.

  2. Mix the freshly grated Parmesan cheese with the softened butter and stir in the finely chopped truffle.

  3. Spread or pipe this mixture on to the rounds of toast.

  4. Just before you are ready to serve the canapés, garnish each one with a slice or two of truffle.
