Butcher shops in Sicily sell these pancetta-wrapped scallions, called cipollate con pancetta. Pancetta is often considered “Italian bacon” because, like bacon, it is made from pork belly and is cured, but it is not smoked. Make this snack with either bacon or pancetta.


  • 24 large scallions, trimmed
  • 8 slices pancetta or bacon
  • Kosher salt and freshly ground black pepper


  • Wrap 3 scallions together with 1 strip of pancetta. Repeat with remaining scallions and pancetta; season with salt and pepper. Heat oil in a 12″ skillet over medium-high. Working in batches, add pancetta-wrapped scallion bunches and cook, turning as needed, until browned and crisp on all sides, 6–8 minutes. Serve hot.
