This simple dessert (panna cotta means “cooked cream”) can be dressed up with nearly any kind of fresh fruit or fruit sauce. The custard is noticeably—and pleasantly—spiked, but the bourbon can be reduced by as much as a tablespoon and the dish will still taste great.

Ingredients

  • 3 tbsp. plus 1 ¾ cups heavy cream
  • 1 ½ tsp. powdered gelatin

Method

  • Add 3 tbsp. cream to a small bowl and sprinkle with gelatin. Let stand for 10 minutes, then gently stir to dissolve gelatin. Combine remaining cream, bourbon, sugar, and vanilla bean in a 4-qt.
