To make the filling for this tart, peaches are simmered with cinnamon and sugar and then mixed with crushed amaretti cookies, which add a nutty almond flavor and a light, almost cakelike texture. The array of decorative cutouts arranged on top gives the tart a festive air.


For the Crust

  • 1 cup flour, plus more for dusting
  • 6 tbsp. cold unsalted butter, plus more for greasing


  1. Make the crust: Pulse flour, butter, sugar, and salt in a food processor until pea-size crumbles form. Add water and pulse until dough forms. Flatten dough into a disc and wrap in plastic wrap. Chill for 1 hour.
  2. On a lightly floured surface, roll dough into a 15″ round and press into a greased 11″ tart pan with a removable bottom set on a baking sheet; trim edges.
