These cookies are quick to make and, somewhat unfortunately, they tend to disappear rather quickly as well. They really do just melt away in your mouth! That’s why I like to make quite a large batch in one go. The amount of oil you need will depend on the quality of your rice flour and how oily your peanuts are, so add it gradually, a little at a time, just until the dough holds together when you squeeze it between your fingers.
