Mom’s Japanese Green Plum Wine

For me, one of the joys of plum wine preparation comes when I can taste the first sip of mature, year-old wine. Fresh ume, Japanese green plums, are unfortunately still hard to find outside Japan. Perhaps you may find them at some large Japanese supermarkets. If you or a friend is in Japan during plum season, and regulations permit, bring back several bags, or have your friend do so. Look for ume toward the end of May or the beginning of June.
