You will need a makisu (a sushi rolling mat) to make these sushi, called nori maki. There are two types: hoso-maki (thin-rolled sushi) and futo-maki (thick-rolled sushi).

Method

To serve the nori-maki

  1. Cut each futo-maki roll into eight pieces, using a very sharp knife. Wipe the knife with a dishtowel dampened with rice vinegar after each cut. Cut each hoso-maki into six pieces in the same way.
  2. Line up all the maki on a large tray. Serve with small dishes of wasabi, gari, and shoyu for dipping.
