A crunchy mix of vegetables and savory bits of pork simply stir-fried over high heat, this is a great way to use up leftovers. College kids cook this in their dorms, it’s found at lunch counters and restaurants, and busy moms make it for their families.

  • ½ green bell pepper, halved and seeded
  • Salt and freshly ground pepper
  • 1 large carrot, peeled, cut crosswise into thirds, and thinly sliced lengthwise
