A juicy meat patty encased in a crispy panko coating and deep-fried is a guilty pleasure, but it is also one of Japan’s most common lunch dishes, either slipped between bread slices spread with a little tonkatsu sauce for a sandwich or tucked into a bento (boxed lunch).

Ingredients

For the Meat Mixture

  • 3 tablespoons panko
  • ¼ cup whole or low-fat milk

Method

  1. To make the meat mixture, in a bowl, mix together the panko and milk and set aside for 5 minutes. In a frying pan over medium heat, melt the butter. When the butter foams, add the onion and cook, stirring often, until translucent, 4–5 minutes. Remove from the heat and let cool.
