A juicy meat patty encased in a crispy panko coating and deep-fried is a guilty pleasure, but it is also one of Japan’s most common lunch dishes, either slipped between bread slices spread with a little tonkatsu sauce for a sandwich or tucked into a bento (boxed lunch).

Ingredients

For the Meat Mixture

  • 3 tablespoons panko
  • ¼ cup whole or low-fat milk

Method

  1. To make the meat mixture, in a bowl, mix together the panko and milk and set aside for 5 minutes. In a frying pan over medium heat, melt the butter. When the butter foams, add the onion and cook, stirring often, until translucent, 4–5 minutes. Remove from the heat and let cool. In a large bowl, combine the beef, pork, panko mixture, cooled onion, beaten egg
