This is Jean-Georges’s basic vinaigrette, an all-purpose dressing in which the honey not only tames the garlic but adds wonderful body and, of course, sweetness.

Fine for salads or drizzling over grilled meat or chicken.

Ingredients

  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon

Method

  1. Use a small wire whisk to combine the vinegar and honey in a small bowl; add the garlic and stir.
  2. Still whisking, add the oil a little at a time. Season to taste and use immediately or refrigerate for up to 2 days; whisk or shake up before using.
