In this typically unlikely combination, Jean-Georges combines two bitter ingredients—endives and black olives—then softens them by adding sour cream. The result is refreshing, even soothing (thanks to the olives, it’s also slightly purple).

This salad should be eaten within 15 minutes or so of making; it does not keep well at all.
