An extremely light (the mushrooms are cooked in water), sweet-and-sour appetizer developed by JoJo chef Chris Beicher, which can be made entirely with mushrooms found in most supermarkets, such as oysters, shiitakes, and creminis.

Better, of course, would be some chanterelles, porcini, and/or morels in the mix. Note that this salad must sit for quite a while before serving. Serve with good crusty bread.
