The combination of flavored bread crumbs and yogurt makes this fun sauce a good dip for almost any vegetable, and also for hot or cold sautéed chicken.

Although Jean-Georges usually plunges blanched vegetables into ice water to stop their cooking, he doesn’t use that technique for broccoli: “It leaches out too much flavor,” he says. Remove the broccoli from the boiling water when it is just
