Serve these as a side dish, float them on top of soup, or lay them under smoked salmon and a dollop of sour cream. They have never gotten that far when I’ve made them, with or without Jean-Georges, because they are best straight from the skillet.

Fresh peas, obviously, are ideal, but frozen peas are a good substitute.
