In an article about grains, I had just finished writing something like “I know of no way of cooking millet that’s worth the effort,” when Jean-Georges served me this wonderful cake. It turns out Jean Georges chef de cuisine Didier Virot felt the same way as I and decided to do something about it. Millet is a small round grain and can be found in supermarkets or health food stores.<
