Florentines are traditional brittle cookies which, given the Vong treatment by pastry chef Serge Decrauzat, wind up sparkling with flavor.

These are fun and easy to make (a good baking project for kids, because the dough cannot be overworked), and the crystallized ginger adds a spark. Serve as an accompaniment to ice cream or crumble them on top.
