He’ll use any number of spice mixtures. This is a favorite: complex and nearly—but not quite—hot.

Ingredients

  • 1 inch cinnamon stick
  • 1 teaspoon mace
  • 1 teaspoon

  1. Combine the cinnamon, mace, nutmeg, pepper, and coriander in a dry skillet over medium heat and cook, shaking, until aromatic, a minute or so. Cool slightly, then grind to a powder.
