What is a meat recipe doing in the vegetable section? Well, what makes these fritters so special is how well the flavour of the leeks holds its own against the meat, while the latter is more in the background. This is a reversal of roles when compared with other meatballs. The result is feather-light texture, and a sharp lemony flavour.
