This is our little tribute to Tzimmes, a common Polish Ashkenazi sweet stew of carrots and dried fruit that in most of its local manifestations, we have to admit, is pretty gross. However, when done properly, with beef flank pieces, marrow bones, goose fat, cinnamon, honey and lemon juice it is one of the most delectable wintery stews you can make. A lesser-known Lithuanian version is made with potatoes instead of carrots.
