Turnip & veal ‘cake’

After about an hour of serious struggling with various kitchen utensils and a host of small, sharp tools — and with turnip shells breaking up or cracking all over the place — we finally gave up trying to hollow out turnips for a popular Palestinian dish where they are stuffed with rice and cooked in tomato sauce. Instead, we came up with this layered dish that saves much hassle and time but also leaves us full of admiration and awe for generations of housewives and mothers who prepared thes
