We were given this recipe by Rafram Hadad, a very colourful character. Hadad was born in Djerba, a Tunisian island with a Jewish minority that settled there over 2500 years ago, and arrived in Israel with his family in the 1970s. The main Tunisian community in Jerusalem, which arrived earlier — in the 1950s and ’60s — was very small so was ‘annexed’ to the much larger Moroccan community and lost some of its unique heritage.
