Ingredients: 100 g walnuts, roughly broken; 6 plums, pitted and cut into quarters (300 g in total); 2 tbsp caster sugar; 1 tbsp lemon juice; 1 tbsp caster sugar; 2 tbsp lemon juice; 4 guava, de-seeded and cut into 3cm pieces (300 g in total); pinch of salt; ½ tsp ground cardamom; 150 ml double cream; 100 g Greek yoghurt; 50 g soft brown sugar; 1 tbsp water; 50 g unsalted butter, chilled and cut into 2 cm cubes; 100 g mascarpone cheese; ½ tsp vanilla essence; 40 g plain flour; 40 g wholemeal flour; ½ star anise, ground; 500 g ripe figs, quartered

It’s an old and much-loved trick — layering cream with seasonal fresh or cooked fruit — and it works every single time; but it is much more clever to spike the cream and fruit with additional layers of flavour that rhyme with each other and ‘play games’ with the taste buds.
