During the month of Ramadan, while many shops and restaurants are closed, special pastries and confectioneries make a seasonal appearance on the streets and in the bakeries of east Jerusalem. One particular favourite is mushabak, a type of batter that is poured into hot oil and fried, then drenched in syrup and sold in bulk for the breaking of the fast feast after sunset. They are displayed piled up over a light that shines though the colourful see-through pastries.
