We’ve published this recipe before, in Ottolenghi: The Cookbook, but as pickled lemons are so central to our cooking and so much better home-made, here it is again. Just remember, the preserving process will take at least four weeks, and you really do need to give the lemons this time. The same method can be used with limes.
