Mint is used extensively in Persian cuisine, and this drizzle is used with soups and other dishes.

Ingredients

  • 30 g/1 oz/2 tbsp unsalted butter or 2 t

Method

  1. Melt the butter or heat the sunflower oil in a small, heavy-based saucepan.
  2. Add the mint and fry for 1–2 minutes until cooked and fragrant.
