These savoury pastries are known as sambousek. They are essential to any dazzling dinner party. Pass them around with drinks and no one will ask when dinner is going to be served.


  • 2 tbsp sunflower oil, plus extra for deep-frying
  • 1 onion, very finely chopped
  • 125 g


  1. Heat the oil in a heavy-based saucepan over a medium heat and cook the onion until it’s soft and translucent. Add the lamb and brown for about 5 minutes, stirring often. Add the salt, cinnamon, allspice and pomegranate molasses and stir well to incorporate, then remove from the heat.
  2. Toast the pine nuts in a heavy-based pan over a medium heat for 1–2 minutes un
