These semolina pancakes are known as beghrir, which means “1000 holes”. The name refers to the multitude of holes that develop on the surface as they cook.
Warm the milk in a saucepan over a low heat. Mix the yeast and sugar with 3tablespoons of the warmed milk, then pour this mixture into a large mixing bowl and set aside. Reserve the remaining warm milk.
