Growing up, we lived on a dairy farm for a while, where we made our own clotted cream. This creamy treat, loosely based on a popular dessert known as layali Lubnan (or Lebanese nights), uses a version made by adding cornflour/cornstarch, which is easier to prepare. If preferred, you can make the dulce de leche in advance and warm it through gently before using in the recipe (see step 5).
