A potato and noodle combination is ideal fare if you live in a cold climate. This soup derives its name from the fact that it is easily digested and therefore thought to be suitable for the elderly.

Ingredients

  • 1 large onion, finely sliced
  • 25 g/1 oz/2 tbsp

Method

  1. In a wide, heavy pan, cook the onion in the butter gently for 10 minutes, or until it begins to brown.
  2. Add the diced potatoes and cook for 2–3 minutes, then pour in the stock. Add the bay leaf, salt and pepper. Bring to the boil, then reduce the heat, cover and simmer for 10 minutes.
