Made in tiny, one-bite pastries, knishes are delicious cocktail or appetizer fare. When made as big, handful-sized pastries, they are the perfect accompaniment to a large bowl of borscht. They can be filled with dairy, meat or pareve fillings (although with meat fillings, or for a meat meal, a dairy-free pastry such as pareve puff brushed with oil must be used). Knishes are great for brunch, or alongside a bowl of soup on a winter afternoon.
