Known as masgouf, a whole roasted fish sitting on a bed of lemon and tomato is a favourite of the Jews of Iraqi heritage. Tahini sauce served alongside is an Israeli-Middle Eastern twist.

  • 1 whole fish, about 1.1 kg/ lb, scaled and cleaned

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Grease the base and sides of a large shallow ovenproof dish or roasting pan.
  2. Slash the fish diagonally on both sides with a sharp knife. Finely crush the coriander seeds, cumin and garlic with a mortar and pestle.
