A zesty onion and tomato sauce spooned over fish steaks then left to bake results in a moist, flavourful, easily prepared fish course. Choose a firm, white fish such as cod, grey mullet, red snapper or pompano for this dish.

Ingredients

  • 45 ml/3 tbsp olive oil
  • 4 onions, finely chopped

Method

  1. Put the oil, onion, sea salt and water in a heavy pan. Stir well and cook gently, covered, over a very low heat for 45 minutes but do not allow the onion to brown. Preheat the oven to 180°C/350°F/Gas 4.
