Blissfully buttery, this noodle and apple kugel is fragrant with cinnamon and enriched with cottage cheese. It was allegedly brought to north America from Russia by a Jewish migrant fleeing the troubles in search of a better life, and simply oozes old country charm. Use flat egg noodles that are at least 1 cm /½in wide.

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Set a pan of salted water over the stove and bring to the boil. Drop the clusters of noodles into the boiling water one by one, and cook according to the directions on the packet, or until they are tender. Drain thoroughly.
