The Jewish community of Cuba dates to the Spanish–American war of 1898. Over the years, the congregation flourished, absorbing first Sephardic Jews, then people fleeing the holocaust. When castro came to power, about 10,000 of Cuba’s 12,000 Jews fled – most to Miami. Garlic rice, served with eggs and fried bananas or plantains, is a simple, typical dish. Simmered black beans are delicious served alongside.
