Wild greens were once gathered in the galilee by necessity during times of austerity, yet they have not always proved too popular in the modern age! now they have come into fashion and are considered very chic, as well as delicious and healthy. Serve this salad with tangy yogurt cheese.

Ingredients

  • 1 large bunch wild rocket (arugula), about 115g/4oz
  • 1 packet mixed salad leaves or wild salad greens

Method

  1. In a large salad bowl, put the rocket, mixed salad leaves, white cabbage, cucumber, onion and garlic. Toss gently with your fingers to combine the leaves and vegetables.

  2. Arrange the tomatoes, pepper, mint, fresh and dried herbs, salt
