Traditionally Iranians have a platter of fresh green herbs, nuts, cheese and bread on the table throughout the meal. I highly recommend you try it at your next dinner. Here, however, I am reviving an old tradition, which feels deliciously modern. All the ingredients are thrown into a food processor and pulsed into a grainy paste. As bread is already included in the recipe, I would recommend eating it spread over slices of Persian cucumber and radishes. It is best made just before serving.</
