This dish makes a fabulous starter, but is also a simple way of feeding lots of people at a party. I’ve just sliced the cucumber for this dish, but you could replace it with cucumber pappardelle.

Ingredients

  • 1.5 kg (3 lb 5 oz) whole salmon

Method

  • Put the salmon in a fish kettle or suitable sized pan, add the wine and top up with cold water until covered. Cover, bring gently to a simmer and cook for 6-8 minutes. Remove from the heat and leave to cool with the lid on until just warm.
