Sesame Seed Chicken

The versatility of chicken is one reason why it is so popular with cooks looking for tasty but quick starters. Here the chicken is marinated, then covered with sesame seeds and deep-fried. A savoury way to begin any meal. As before, the chicken needs to be deep-fried in batches, to ensure that it cooks properly and crisply.


  • 225g (8 oz) boneless, skinless chicken breasts
  • cornflour, for dusting
  • 2 egg whites, lightly beaten
  • 6 tablespoons raw white sesame seeds
  • 450 ml (15 fl oz) groundnut (peanut) oil


  • 1 tablespoon light soy sauce
  • 1Β½ tablespoons Shaoxing rice wine or dry sherry
  • salt, to taste
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons lemon juice


  1. Cut the chicken on the diagonal into thin strips about 7.5 cm(3 in) long. In a medium-sized bowl, combine the marinade ingredients. Add the chicken and mix well to coat. Drain, discarding the marinade.
  2. Dust the chicken with cornflour, shaking off any excess. Then dip in the egg whites and finally in the sesame seeds. Divide into two or three batches.
  3. Heat a wok over high heat until it is hot, then add the oil. Turn the heat down to moderate and deep-fry the chicken, one batch at a time, for 5 Minutes or until golden brown. Remove when cooked and drain on kitchen paper. Repeat for the remaining batches.
  4. Arrange on a warm platter and serve at once.
