I often think that chicken livers are a neglected but delicious food. They cook quickly and are quite economical. Here they are simply marinated and rapidly seared in the wok. The secret is not to overcook them but to leave them slightly pink and moist.

Ingredients

  • 450g (1 lb) fresh chicken livers
  • 1 tablespoon salt

Method

  1. Cut the chicken livers in half. Put in a large bowl and add the salt. Mix together well. Add enough water to cover the livers and leave to soak for 10 Minutes. Then rinse, drain well and pat dry with kitchen paper. Discard the water.
  2. In a medium-sized bowl, combine all the marinade ingredients. Add the chicken livers and mix well. Marinate for 15 Minutes at roo
