Fresh tuna, simply seared in a hot wok, has become very popular, and it is ideal for fast cooking. Just remember two things: if overcooked, tuna can quickly dry out, and it is important to get the highest quality tuna you can afford.

Ingredients

  • 4 fresh tuna steaks, about 100g (4 oz) each, cut thickly

Method

  1. Lay the tuna steaks on a platter. In a small bowl, combine the ingredients for the spice mix and blend thoroughly. Sprinkle this evenly over both sides of the tuna steaks.
  2. Heat a wok over high heat and when it is hot, add the oil. When the oil is very hot and slightly smoking, add the tuna steaks and sear them on one side for 2 Minutes.
