This is a fast version of a Hong Kong-inspired dish. Each guest places a portion of the chicken in a lettuce leaf, wraps the leaf around it and eats with their fingers. Delicious finger food and tremendous fun for an informal party.

Ingredients

  • 275g (1 lb) boneless, skinless chicken breasts
  • tablespoons groundnut

Method

  1. Prepare the vegetables. Dice the chicken into small 5 mm(¼ in) cubes.
  2. Heat a wok over a high heat until it is hot. Add the oil, and when it is very hot and slightly smokin
