This delicious aubergine purée was inspired by a good friend, Mic Cheminal-Teran, a well-known French designer of costumes for theatre and cinema. To make this dish for vegetarians, use vegetarian oyster sauce. Serve cold or at room temperature. This is one recipe where you won’t need your wok!
