Curried Courgettes

This is a delectable, healthy and easy courgette dish that is cooked in Minutes in the wok. You can serve it either as a satisfying vegetarian dish on its own or as a tasty accompaniment to any meal.


  • 675 g ( lb) courgettes, ends trimmed
  • 2 tablespoons groundnut (peanut) oil
  • 3 tablespoons coarsely chopped garlic 50g (2 oz) sliced onions
  • 2 tablespoons Madras curry powder
  • 1 tablespoon Shaoxing rice wine or dry sherry
  • 6 tablespoons water
  • 2 teaspoons sesame oil


  1. Cut the courgettes into 2.5 cm (1 in) cubes.
  2. Heat a wok over high heat until it is hot, then add the oil. When it is hot, add the garlic and onions, and stir-fry for 30 seconds.
  3. Add the courgettes and stir-fry for 2 Minutes.
  4. Add the curry powder, rice wine or sherry and 3 tablespoons of the water. Cover the pan or wok and continue to cook for 3-5 Minutes or until the courgettes are tender. Check from time to time, adding the additional 3 tablespoons of water if necessary.
  5. Finally, stir in the sesame oil.
  6. Turn onto a warm platter and serve at once.
