Heat a wok over high heat until it is hot, then add the oil. When it is hot, add the garlic and onions, and stir-fry for 30 seconds.
Add the courgettes and stir-fry for 2 Minutes.
Add the curry powder, rice wine or sherry and 3tablespoons of the water. Cover the pan or wok and continue to cook for 3-5 Minutes or until the courgettes are tender. Check from time to time, adding the additional 3tablespoons of water if necessary.
