Stir-Fried Green Beans with Garlic

Green beans are never better than when quickly stir-fried in the wok and perfumed by fragrant garlic. A perfect vegetarian dish that is a great accompaniment as well.


  • 450g (1 lb) French or dwarf beans or haricots verts, trimmed
  • tablespoons groundnut (peanut) oil
  • 3 tablespoons finely sliced garlic
  • salt and freshly ground black pepper, to taste
  • 1 teaspoon sugar
  • 3 tablespoons Shaoxing rice wine or dry sherry


  1. If the beans are more than 7.5 cm (3 in) long, slice them. Otherwise, keep them whole.
  2. Heat a wok over high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the garlic and stir-fry for 30 seconds.
  3. Add the beans, salt, pepper, sugar and rice wine or sherry, and continue to stir-fry for 1 minute.
  4. Cover the wok and simmer for 5 Minutes or until the beans are fully cooked, adding another tablespoon of rice wine or sherry or water from time to time as needed.
  5. Uncover the wok and continue to stir-fry until all the liquid is evaporated.
  6. Turn onto a warm platter and serve at once.
