These vegetable fritters (similar to pancakes), served warm or at room temperature, are an appetizing starter for any meal. You may substitute other vegetables as long as they are firm, such as cucumbers or courgettes. The key ingredient in this version is fresh waterchestnuts — try to obtain them, for they add a special sweetness and texture to the fritters. Served with a simple green salad, these vegetable fritters also make a delicious light lunch.
