This is a version of a popular Hong Kong dish that usually includes minced lean beef, pigeon or pork. But the texture of the meat or poultry is not missed when one savours the tasty crunchiness of the vegetables combined with crispy fried bean thread noodles, cupped in a refreshing lettuce leaf and flavoured with hoisin sauce. This dish makes a good starter for a festive meal, as guests can fill their own lettuce cups at the table.
