This recipe was inspired by a colleague, Bruce Cost. A superb chef and author of excellent cookery books, one of his specialities is the food of Southeast Asia. Here, I elaborate on a version of his delicious Asian pesto. Pesto is an Italian term meaning any sauce whose ingredients have been pounded and mixed together.
