This recipe was inspired by a colleague, Bruce Cost. A superb chef and author of excellent cookery books, one of his specialities is the food of Southeast Asia. Here, I elaborate on a version of his delicious Asian pesto. Pesto is an Italian term meaning any sauce whose ingredients have been pounded and mixed together. The original Genoan pesto sauce consists of fresh basil, Parmesan cheese, oil and garlic pounded into a smooth green paste. Ordinary fresh basil may be used here but, if you
