I first enjoyed this unusual rice dish in Hong Kong and only subsequently learned that it is of Thai origin. Thai cooks commonly hollow out the pineapple and fill it with fried rice or some other tasty stuffing. It is a very attractive way to serve fried rice, but hollowing out the fruit takes a little effort and is not to be done every day. An easier alternative is to cut the pineapple in half lengthways. This is an attractive dish for a special dinner party.
