Cucumbers are sliced into bite-size ovals and staffed with seasoned beef strips and vegetables for a crunchy appetizer that’s sweet, salty, and spicy. For an easy no-fuss assembly with the same great flavor, pile the seasoned vegetables and meat on slices of the stir-fried cucumber.

Method

Cut the cucumbers into 2-inch (5-cm) pieces on the diagonal. Then cut slits about ¼-inch (6-mm) apart and ¼-inch (6-mm) deep into the cucumber. Do not cut all the way through. Sprinkle the salt on the cucumbers and let them sit for 3 minutes. Dry with a paper towel.
