This sour-and-spicy soup couldn’t be easier to make. We sliced ready-made Chinese (Napa) cabbage Kimchi into strips and set them into beef broth. The hot peppery marinade blends with the broth for a soup that is guaranteed to warm you up.
In a medium saucepan, combine the kimchi, daikon and Beef Stock. Bring to a boil and reduce the heat to low. Simmer for 20 minutes.
Taste and correct the seasonings with salt if needed.
